AHDB’s free, award-winning Meat Education Programme
This FREE programme is suitable for all colleagues (we especially think that some of the entry level modules are suitable for new entry line workers / butchery colleagues and front of house colleagues for a basic refresher and answers lots of questions that they get asked frequently).
Designed for butchers, chefs and anybody in between, our practical butchery and theory training modules cover beef, lamb and pork cuts, cooking with red meat and customer service.
Online assessments and certifications are available for the theory modules and are completely free of charge. A handy educational tool for those in the meat industry, the MEP is aligned with the Butchery Apprenticeship (Level 2) and the Advanced Butcher (Level 3).

Meat Purchasing Guide
More and more meat products and specifications have become available for retail and catering.
This has resulted in inconsistencies in products and standards. The variations in meat carcasses and processing methods have also contributed to these inconsistencies.
To help bring consistency to the industry, we have developed a meat purchasing guide, a completely new specification and coding for beef, pork, veal, lamb and mutton products. This guide features approx. 800 cuts from the beef lamb and pork sectors (including veal and hogget).
